Vegan Leftovers

























Okay, nothing in the fridge. Seriously. Nothing, but leftovers with the Emmy Awards Red Carpet shows already started.

I had some fresh spinach twice a couple days ago which would be good, but not alone. I had pulled some frozen mango out of the freezer for breakfast since I had no fresh fruit. Dinner the other night included my Seeds of Change “Tigris” mixture of seven whole grains (yum). I have wanted to gobble that up ever since. I also had some strips of frozen yellow bell peppers from an L.A. Foodies trip to the LAX-C food mart. So . . .

I diced the peppers and sprayed a pan with olive oil, and sautéed the peppers with salt and pepper, then added the grains. I was heading for a fruity, fried rice with spinach. I microwaved the spinach and threw it in the pan. At the last minute, I added the mango cubes. I deglazed the pan by adding a touch of balsamic vinegar. Beautiful. Perfect. Not sure what to call it and not sure how many points this might be, but I took a photo with some lovely Saddle Rock Chardonnay from my tasting the other day at Malibu Wines. Ah, vacation comes to an end. This is the perfect taste of vacation with vegan leftovers to watch the Emmy Awards.

Olive Oil Spray
1/3 C. Yellow Peppers diced
1 C.
Seeds of Change "Tigris" Seven Whole Grains
1-1/2 C. Fresh Spinach
Fresh Ground Pepper to taste
Fresh Ground Sea Salt to taste
1/3 C. Mango frozen (defrosted, cut into small cubes)
2 t. Balsamic Vinegar
